Dietary Information

Potassium

Potassium is a mineral needed by the body for proper muscle, nerve and heart function. Too much potassium in the blood can cause weakness and a dangerously slow heart beat.

The kidneys normally regulate the concentration of potassium in the blood. When the kidneys are not working properly, the concentration of potassium in the blood can increase to unsafe levels without warning.

This guide contains recommendations for dietary changes that can help you to maintain the concentration of potassium in your blood at safe levels.

A Low Potassium Diet:

Decrease your intake of vegtables, especially:
Artichoke, asparagus, bamboo shoot, beet, beet green, broccoli, brussel sprout, carrot, cauliflower, celery, chicory green, chinese cabbage, fennel, green bell pepper, heart of palm, kale, mushroom, okra, parsley, potato, pumpkin, radish, red bell pepper, scallion, seaweed, summer squash, taro, tomatillo, tomato, water chestnut, winter squash, yam and zucchini.

If you like vegetables, substitute: Alfalfa, jicama, leek, onion.

Decrease your intake of fruits, especially: Apricot, banana, cantaloupe, cherry, durian, gig, grapefruit, guava, honeydew, kiwi, lemon, nectarine, orange, papaya, peach, plum, prune and tangerine.

If your like fruits, substitute: Apple, blueberry, cranberry, pear, pineapple.

Decrease your intake of the following foods: Coffee, cocoa, molasses, fish sauce, worcestershire sauce

Substitute: Soda and tea.

Decrease your intake of the following sources of carbohydrates: Breads made with bran: All Bran Original (Kellogg's), All-Bran Bran Buds (Kellogg's), Fiber One (General Mills), and Kashi GoLean (Kashi)

Substitute: White rice, pasta, couscous, breads made with rice flour, white flour or cornmeal, corn flakes, corn grits, cream of wheat, Corn Chex (Gneral Mills), Crispix (Kellogg's), Kix (General Millsl), Rice Chex (General Mills) and Rice Krispies (Kellogg's).

Decrease your intake of processed meats as well as the following sources of protein: Cod, monkfish, clam and lima bean

Substitute unprocessed meats as well as the following sources of protein: Cheese, eggs,nuts, sesame seed, lamb, and shark

Allow yourself the following snacks: popcorn and unsalted pretzels
